


DISTRIKT GA-LACTIC MALT ZERO 'STRAIGHT RYE' THE PILOT

Story : Our first 'Whiskey from a wash' titled 'Great Southern Grain Series One' saw Distrikt Whiskey collaborate with Lucky Bay Brewing in the town of Esperance, WA.
We created a recipe practicing sustainable fermentation techniques with 100% unmalted local grains and the substitution of Esperance Honey and the use of freeze dried LACTO-bacillius in the fermentation process. This allowed us to accentuate natural grain, promote efficiency in time and cost, eliminate unnecessary transport and unveiled notes and profiles in the new make spirit to distill and mature to set parameters of a classic Australian Straight Rye Whiskey. The grain bill comprised 61% local, unmalted farmer's rye and 39% unmalted local barley following on from an alternate rhythm to become 'Malt Zero' matured in a 100% new Single American Oak Cask for 2.5 years.
Eyes : Amber, gold
Nose : Cinnamon, clove, spice and honey. Treacle, toffee and caramel sundae.
Finish : Apple pie, baked waffle and pastry crust. Charry tannin and a lingering, tasteful slow burn with natural grain notes and a warming, layered texture that continues to build. A touch of sweetness at the back of the palate.
