
Bourne from a Neighbourhood Brew hiatus, DISTRIKT WHISKEY sought out to feature Australia’s finest creative talents and distillers utilising select Western Australian equipment, brewers and manufacturers to create unique micro batch whiskey with a bent for the multiverse.
Distilled at Illegal Tender Rum Co. , casked and matured at Whipper Snapper Distillery & bottled at Haiver Spirits - We believe this is Western Australia's first real authentic Whiskey distilled from finished, quality craft beer - our own 'Neighbourhood Brew'.
The first 'micro batch' yielded a total of 175 bottles for commercial release.
There were two different casks, One American Oak 64 x litre & one Hungarian Oak 112 litre. Casking date was November 2018, and de-casked February 2021.
The Hungarian Oak Whiskey was then bottled at 51% abv and finished in a toasted French Oak Cask (18 x bottles only), and in another French Oak Cask that held Piggs Peake Port 2014 Vintage, shipped over straight from the barrel in the hunter Valley (18 x bottles only).
The barrel was refilled immediately with beer (Collaboration with Wedgetail Brewing co.), and then finished again in french oak recently emptied of 27 year old Port.

The American Oak Whiskey was bottled at 'Cask Strength' 51% abv, and released with two finishes (once the above sell through). Sherry Cask finish (same as LimeBurners use - 18 yr old), and Shiraz Cask finish (James Talijancich Solero - 20 yrs old fortified Shiraz). The Shiraz cask is the final Whiskey to be released and is actually a blend of the American & Hungarian Oak Casks. The barrel was then refilled with a Chocolate Oatmeal Stout Collaboration beer - including interesting 'Rotovap' technology.
